Food: Recent Recipes

I can't remember the last time I wrote about food on my blog so I thought i'd share a few of the things i've made recently. I love cooking but being a student makes it really difficult as there isn't a lot of space to make things and people rarely tidy up so it's a lot of effort. When I do manage to get the kitchen to myself I usually try and make something nice and occasionally i'll make something a bit unhealthy as a treat like the French Toast below.

French Toast with Yogurt and Blueberries
I've been wanting to make proper french toast for a while and after a bit of a disaster the first time around a few months ago I thought i'd give it a go again. I made it up as I went along - 2 eggs, a splash of almond milk and some vanilla extract mixed together. You simply soak some dry bread in the mixture for a few seconds and then place it in a hot frying pan until it's brown and then flip it over so it's evenly cooked on both sides. Repeat for however many slices you want and then place on a plate with a topping of your choice. I opted for peach yogurt and blueberries but you could pick anything you wanted.

Creamy Pasta Bake
This was another make it up as you go along risk that worked perfectly. I had lots of different things I wanted to use up so I thought i'd make them into a pasta bake which is definitely a student favourite.
I cooked the chicken and mushrooms in one pan and the pasta in another. I also roasted a handful of cherry tomatoes in a hot oven for 15 minutes until soft. I then melted 3/4 of a tub of Philadelphia (you can use any flavour - mine was the (now discontinued) Tomato and Basil with a splash of milk and then stirred it together with the chicken, mushrooms and tomatoes. I then added the pasta, mixed it around and placed it in a dish with a sprinkle of cheese on top. I cooked it for around 10-15 minutes in the oven until the cheese was melted and then served. Perfection.
